When I think of a vegetable that is very versatile when it comes with consuming, the first vegetable that would pop into my head is the carrots. They can be eaten raw, cooked or a carrot juice – whichever of these ways, its signature orange color and sweetness could really make you love this perfect health food!

Carrots get their color from antioxidants called carotenoids. One of these carotenoids is beta carotene, a pioneer to active vitamin A that is responsible for many of the carrot and carrot juice benefits that we know about today.

  1. Improves eyesight

Carrots are rich in beta-carotene, which is transformed into vitamin A in the liver. A vitamin A deficiency can lead to xerophthalmia, a progressive eye disease that can harm normal vision and result in night blindness, or the inability to see in low light or darkness.

2. Better Skin Health

Carrots are rich in carotenoids. If you have any type of skin infection, cuts, or other wounds, you’ll find that carrots and carrot juice profit your skin health by increasing your ability to heal quicker and to fight infection and noticeable signs of skin inflammation.

3. Cleans Teeth and Gums

Carrots act as a natural abrasive that scrubs away plaque and leftover food particles. Carrots stimulate gums and trigger a lot of saliva, which, being alkaline, balances out the acid-forming, cavity-forming bacteria. The minerals in carrots avoid tooth damage.

4. Flush Out Toxins

Vitamin A supports the liver in flushing out the toxins from the body. It decreases the bile and fat in the liver.  It’s believed carrots contain properties that help reduce fat and bile in the liver—the removal of these substances leads to a better functioning liver and improved overall health.

Carrots were one of the vegetables studied in recent research on foods rich in beta-carotene and bone health. The beta-carotene in carrots is a strong antioxidant that is related with bone health.

Carrots are rich sources of potassium, which is a vasodilator and can reduce the tension in your blood vessels and arteries, thus increasing blood flow and circulation. Raw carrots are also rich in a fiber called pectin that helps lower cholesterol.

They are a very good source of biotin, vitamin K, dietary fiber, molybdenum, potassium, vitamin B6 and vitamin C. They are a good source of manganese, vitamin B3, vitamin B1, panthothenic acid, phosphorus, folate, copper, vitamin E and vitamin B2.
